Recipe: Valentine's Smoothie

My Valentine's Day was absolutely wonderful! I came home from teaching my 6pm class to find my significant other making gorgeous homemade gnocchi with vegetables and pesto that was to be accompanied by champagne and followed with a fruit custard tart. Delicious!! (Note: I munched on candied ginger to stimulate my digestive fire while the gnocchi was plated.)  Today, I woke up and forced my heavy-feeling body to yoga practice then came home and eyed up what could be for breakfast. Using the produce drawers in my fridge, I put together this Ayurvedic Smoothie. It's very tasty, strengthens digestion and moves the lymph. Give it a try and don't hesitate to improvise a bit on your own! 

Makes 2-3 servings.
 


1 zucchini, chopped
3 stalks celery, chopped
1/2 a granny smith apple, chopped
2 already cooked beets, chopped
2 leaves green chard with stalks, chopped
approximately 2 T fresh ginger, peeled & cut into slices
1 can coconut juice 
optional: raw honey to top

Put all ingredients but coconut juice in a steamer, and steam until all are tender. Move to blender and add 1 c of steaming water. Blend until smooth. Add coconut water, blending periodically, until desired taste and consistency is found. If desired, can top with raw honey.
  • Vata & Kapha: Great! Vata can use maple syrup instead of honey and rice milk instead of coconut juice
  • Pitta: Good. Can reduce beets to one and add cilantro for more therapeutic effects.
