This Lemon Avocado Sauce is absolutely delicious! This was lunch yesterday, and it was gone in a flash! This dish was partially inspired by my romantic Valentine's Day meal last year: a lemon-ginger-brussels sprouts homemade pasta: heavenly! (We'll see what happens this year...) You'll find that the lemon complements the brussels sprouts perfectly and the avocado lends a creaminess without needing dairy. I highly recommend giving this a try. I imagine it would taste equally great as salad dressing or on top of rice and veggies. COMBINE:
- Penne Pasta, cooked and tossed lightly in olive oil
- Brussel Sprouts: wash, remove any damaged outer leaves, then halve, core and pull leaves apart. Steam until tender-- approx 4 minutes.
- Lemon Zest to garnish
