This Rice Almond Cereal is delicious & so easy!! two of my favorite things! It takes no time at all provided you don't have your blender stored in the attic somewhere. I highly recommend keeping all appliances somewhere with relatively easy access (for me that on top of my refrigerator, unusual but useful). The cereal in the photo I topped with the amazing raw honey pictured as I was nursing a bit of a head cold (too many late nights and pot lucks) and honey is great for bringing heat to the body and drying out excess mucus. The following day I ate it with maple syrup, scrumptious, and I had no problem eating this two days in a row it's so good. The almonds are terrific for sustenance. I had a very busy week and this kept me going steady. I can't recommend this recipe more highly.
Rice Almond Breakfast Cereal
adapted from Ayurvedic Cooking for Westerners by Amadea Morningstar
Serves 2-3
2/3 c uncooked white basmati rice, ground in a blender
2/3 c raw almonds, ground in a blender
3 c water
pinch of salt
top with: ghee, cinnamon, cardamom (!), and your choice of sweetener
Bring the water with salt to a boil in a medium size pot. Stir in the ground rice & almonds with a fork. Reduce heat to medium-low and continue cooking uncovered until rice is cooked, about five minutes.
- Vata: excellent
- Pitta: mildly increases due to nuts & cinnamon. Eat only occasionally.
- Kapha: moderately increases due to nuts and unctuous nature of the dish.
