The other day I wanted something light to eat, something that my body would digest with ease... To be completely honest, I ate a late dinner and my tongue had seen better days. This recipe I made on the fly, and it's quick and easy enough that even on those lazy morning days one can manage to make breakfast. Cinnamon and cardamom are good spices for digestion without sending pitta out of balance. The date pieces you can buy in bulk in any Whole Foods or Rainbow Grocery; they bring a special ease to this recipe as it eliminates the 'hassle' of chopping sticky dates. Even with just one apple, this dish is satisfying due to the coconut and its warmth. Enjoy!
1 apple, chopped
1 T date pieces
1 T dried coconut
1/8 t cinnamon and cardamom
1 t ghee
Saute spice, apple and date pieces in the oil over medium heat for two minutes. Add coconut, stir. Once the majority of the coconut has browned, add enough water to cover the mixture. Cover and simmer for 10 minutes, stirring periodically. Turn off the heat and allow to sit for 2-3 minutes. Serve, yum!
VP: great! Pitta could reduce cinnamon to just a dash.
K: reduce coconut to 1 t and add a dash to dried ginger to spices.
