Recipe: Baked Apple Delight

Last night I cooked dinner for the '448 family'. One house (number 448) serves as a roof for some of my best friends and my boy-friend; I'm the non-resident cook, which I love. One of my friends is in the fashion world (her website: zeller riley), which means model mindful (low carb/calorie/fat) meals. So for desert, it was baked apples. These are delicious and so pure! My friends all went back for seconds. And if you have leftovers the next day, chop it up, toss it in with your oatmeal and you've got a morning breakfast treat.
Serves 4.

3 large good baking apples (see here for guidance: Apple Varieties)
1/4 c raisins 
1/4 c chopped walnuts (raw)
1 T lemon juice
1/4 t cinnamon powder
1/4 t nutmeg powder
water

Preheat oven to 350 degrees. Core apples using corer or pairing knife and make holes 3/4-1 inch wide. Slice each apple in half on the horizontal. Place apples, cut side down in a baking dish where the apples don't need to touch. Make filling by combining cinnamon, nutmeg, raisins, walnuts and lemon juice in a bowl. Fill apples holes with the spiced filling so that they're full to the top and then some. Put remaining filling in the bottom of the dish. Pour water in the dish so that covers the bottom of the dish with ease. Cover tightly with foil, put in oven for 25 min. Remove foil, spoon liquid from bottom of dish over the apples. Bake for 5-10 more minutes until desired tenderness is achieved . Remove and serve promptly.

  • Vata: Great! Could add ghee on top of apples (over filling) before baking.
  • Pitta: Good. Sub Cardamom for Nutmeg. Reduce lemon juice to 2 t. Halve chopped walnuts. Double raisins.
  • Kapha: Not so great because they're sweet, warm and juicy. Try this yummy looking recipe for Apple Chips instead. Sub 1 T honey (thinned with water) for sugar. Apple Chips
