Recipe: Hot Quinoa Cereal

Get kapha moving with this great Quinoa (keen-wah) Cereal. Super simple to prepare, just like oatmeal but with loads of protein wrapped up in this little seed! This breakfast is great during spring or anytime you're feeling a little congested or energetically slow: light and filling, without being heavy. 

Serves 2.
FOR CEREAL:
1/2 c quinoa, rinsed well
1 c fresh water
1/4 tsp ground ginger
1/8 tsp ground cinnamon
2 dashes of nutmeg
pinch salt

TOPPING:
1/2 c medley of raisins, dried cranberries and sliced almonds
honey
rice, hemp or almond milk

Put dried fruit & nut medley in a bowl and cover with water to soak. Set aside. In a small pot, put quinoa over high heat. Toast, stirring frequently, until a nutty fragrance arises. Add water & spices to quinoa and bring to boil, then set to simmer, stirring occasionally. After mixture has thickened, cover and leave for three-five minutes until quinoa looks fluffy.  Remove pot from heat. Drain fruit & nut medley. Serve quinoa with fruit and nut topping, honey & 'milk' to taste. 
  • Vata: Use plenty of hot cow or nut milk. Substitute rapadura sugar or dates for honey. Add fruit & nuts to quinoa with water & spices. Top with ghee or coconut oil. 
  • Pitta: Use maple syrup instead of honey. Omit spices or bring down to just a pinch.
  • Kapha: Substitute cloves for nutmeg.
